Vegan Breakfast Recipe: Staying-in-bed-all-day pancakes






These pancakes are SO GUARANTEED AMAZING that firstly, you will dream about them, and secondly, you will be in such a carb-sugar coma afterwards that it's the perfect excuse to have breakfast in bed. So you don't have far to fall into your carb-sugar coma. And in that coma you will dream about these pancakes. AND THE VICIOUS CYCLE WILL CONTINUE.

Here, friends, is the recipe:


Ingredients:


30 grams of nuttelex, melted (or similar vegan spread)
Half a cup of caster sugar
The equivalent of two eggs (organics egg replacer)
200 ml of soymilk
Two cups of flour
One teaspoon of baking powder
Three quarters of a cup of water
Nuttelex for the pan

TO SERVE:
Nuttelex
Maple syrup
Fruit
Your favourite pancake toppings

Instructions:

Beat up the egg replacer (if you're using organics, it's two teaspoons of powder and four tablespoons of water, total) and the sugar with a balloon whisk.






Whisk in the melted nuttelex and the soymilk, then add the flour and baking powder and whisk out the lumps, but don't over whisk.





It's going to be MUCH TOO THICK, so you need to thin it out. I like to whisk in three quarters of a cup of water, but you might want to add more or less depending on your taste.





Melt a tablespoon of nuttelex over a medium heat in your pancake frypan. (Yes, I have a dedicated pan for pancakes. It's just the right size and cheap and super nonstick). Then, pour half a cup of mixture into the pan once the pan is hot.





Cook for a couple of minutes. Little bubbles will appear in the top, and once they're in the middle and all through, it's time to flip the pancake carefully!





Cook that side for a couple as well, check it for cooked-ness, then plate it up.

You may need to add a little more nuttelex to the pan, do so as required. This will make around six big ole pancakes, with one being a little bigger than the others as it contains all the bowl scrapings...


Okay, now divvy them up as evenly as you like. This amount will STUFF two people, and be awesome for three people. Top with your favourite toppings and serve!

Then, probably, have a little sleep to wear off the carb and sugar overload!
