Vegan Dinner Recipe: Orecchiette with white wine, garlic and greens






This is a delicious, visually appealing dinner. A grown-up dinner. A dinner that I got from a cookbook and altered slightly... and that cookbook was by my fave vegan author, Isa Chandra Moskowitz. LOVE HER. It's not an all-the-time dinner... there's no protein source included... but it's really, really tasty. And therefore excellent to serve to non-vegans, to set a good example about how TRULY QUALITY a good vegan pasta can taste. Let us begin:




(Serves 4)

Ingredients:

500 grams Orecchiette (it's shaped like ears, guys. Available from your local friendly Italian grocer, if not your supermarket)
A head of brocoli, divvied into florets and sliced
Two tablespoons of olive oil
Eight cloves of garlic (YES EIGHT. 8. OCHO.), sliced
A pinch of grated lime zest
A quarter cup of white wine
A cup of veggie stock
Two tablespoons of lime juice
Half a teaspoon of salt
Four cups of chopped kale
An avocado, quartered and sliced

Instructions:

Boil the pasta water, and while it's boiling, prep your brocoli, garlic, lime, and kale.

When the water is ready, salt it and add the pasta. You'll be cooking it as per the packet instructions, and during the last minute you will add the brocoli, so for God's sake don't drain the water prematurely.

Heat the oil over a low/medium heat in a deep pan.

Add the garlic and lime zest and cook, stirring, for two minutes.




Add the wine and turn the heat up, bring the wine to the boil, and cook for two minutes, stirring.




Add the veggie stock, lime juice, and salt and bring to the boil. Reduce the heat. Stir in the kale.

Check the pasta. It should be almost done. One minute shy of done, add the brocoli to the pasta.

When the pasta is done, drain the brocoli and pasta into a strainer.

Now add the brocoli and pasta in with the kale and garlic and wine and whatnot.




Cook on a very low heat for three minutes, making sure the garlic and wine and kale get all beautifully mixed with the pasta.

After distributing into bowls, divide the avocado equally between the bowls. Toss it gently through the pasta.
